Recipe: Sillsalad

Sillsalad combines everything Swedish: pickled beets and gherkins, potato, dill and cream, herring and apples, into a wonderfully bright combination of flavours and textures. Perfect for Christmas with its jewel bright colour, it’s a must-have for your Julbord.

From Favorite Swedish Recipes

1 salt herring, or eqivalent amount in sill pieces, chopped
250g each of waxy boiled potato and pickled beetroot, finely diced
80g pickled gherkin, finely diced
120g apples, peeled, cored and finely diced
1/4 white onion, finely chopped
4 tbs vinegar
120ml double cream
2 tbs sugar
salt & freshly ground pepper to taste

Whip the cream,  mix everything together and adjust seasoning/sugar

Pack into a mould and chill. Turn out onto a plate and garnish.
