King Prawn Chow Mein

Serves: 4  |  Weight Watchers ProPoints  13

Ingredients

2 tsps Sesame oil
300g frozen king prawns, defrosted and drained. (I love the Lidl ones in a box)
600g  peppers, sliced, plus any other veg you like (mushroom, shredded carrot, beansprout, pak choi etc)

2 sachets Chinese-style stir-fry sauce
250g pack chow mein noodles (dry weight)
50g  cashew nuts

Method

1. Cook the noodles in plenty of boiling water, drain and keep warm.
2. Heat a little oil in a wok and stir-fry the vegetables for 3 minutes, add the prawns and heat through.
3. Add the sauce and noodles, and cook for a further 2-3 minutes until piping hot.
4. Stir through the cashew nuts, then divide between four bowls and serve.
