Easy roast pork with champ

Pork leg steaks with a spiced apple stuffing and wrapped in streaky bacon

Servings: 4 •  Weight Watcher ProPoints+: 11 pt
Ingredients
4 lean pork leg steaks about 100g each
4 rashers streaky bacon 

Stuffing
1 large dessert apple
1 small onion
a sprig of rosemary 
1 tsp unsalted butter, 
1 tsp soft light brown sugar, 
30ml orange juice, 
zest of 1 orange, 
sea salt, 
pepper
50g breadcrumbs
1/2 tsp nutmeg, 
1/2 tsp cinnamon, 
pinch ground cloves

broccoli, leeks and cabbage, or your preferred green veg, about 250g,

Directions
First preheat the oven to 180C
Make the mash and prep the veg.
Then make the stuffing
Peel, core and chop the apple and onion finely. Melt the butter in a non stick pan and fry until just coloured
chop the rosemary and mix all the stuffing ingredients in a bowl until combined. You should have a mixture that hold together, but isn’t too wet/sticky. 

Lay your pork steaks out flat. Divide the stuffing between them, making a dollop in the middle. Fold the pork over, making a parcel to enclosing the stuffing, and wrap with the bacon rasher. Don’t worry about sealing the parcels, if the stuffing leaks out during cooking it will crust and add to the general tastiness.

Arrange your pork parcels on a baking tray and bake at the top of the oven for about 40 minutes.

While the pork is cooking, steam the veg, mash the potato with a small knob of butter and a splash of milk, combine the two and season.

Save 3 points by serving the veg separately and passing on the mash.

My family like gravy: I use granules and use some of the mixing water to scrape up the cooking juices from the pan.
