Sweet Potato Cottage Pie

A recipe for when I’m low-carbing, or simply trying to get more veg into the family’s diet!

Serves 4
Takes about 45 minutes to prepare and cook
342 calories/6PP per serving


300g sweet potato, cut into chunks
2 carrots, peeled and cut into chunks
1 cauliflower, broken into florets
400g lean minced beef
1 onion, chopped finely
1 courgette chopped finely
100g green beans chopped
100g mushrooms, chopped
1 tsp dried herbs
4 tsp gravy granules for beef

Steam the sweet potato, carrot and cauliflower over boiling water until tender.(Save the water to add to the meat later)

Heat a deep frying pan and brown the beef
Add the onion, courgette, beans, mushroom and and mixed herbs to the beef. Add 400ml veg cooking water and simmer for 20 minutes.

Preheat the grill and warm a large baking dish for a few minutes. Mash the veg, seasoning with pepper.

Stir the gravy granules and a splash of Worcester sauce into the beef, tip into the baking dish and top with the mash. Grill until lightly browned.
